PVPP = E1202 (Polyvinylpolypyrrolidone) is a white, light powder, insoluble in water, in aqueous ethyl alcohol or in organic solvents. It was obtained by polymerization of vinyl pyrrolide. The final product is a network of macromolecules.
Polyvinylpolypyrrolidone is treated with beer, wine, juices to prevent cold (protein-polyphenolic) opacities. Its action is based on the binding of polyphenols, which allows to improve the colloidal stability of beverages, to harmonize the taste of wine.
Depending on the desired shelf life and type of beverage, polyvinylpolypyrrolidone (E-1202) in an amount of 5 to 80 g / l is added thereto as a dry powder or a 10% suspension. After treatment, E-1202 is filtered off.
